Sick of progression? Sometimes it’s nice to get out and go somewhere that celebrates the beauty of the past. Down Acland St, St Kilda there’s a community of cool cats who know how to appreciate the finer things in life. Vibe owner - Keith Hill, makes it his job to identify with and give special attention to the local folk.
St Kilda draws an affluent crowd who hunt the city for great eats and classy sounds. Vibe’s chefs are handpicked by Keith who himself has a background in cooking with extensive culinary experience working in London, Switzerland, Austria and Melbourne’s Windsor and Regent hotels. The portions are hefty so pack an appetite before going down or you’ll miss out on their sweet desserts.
Vibe celebrates old school glamour big time with a definite Moulin Rouge feel accentuated by luxurious velvet draping from the walls to the flamboyant chandeliers. It’s fine dining without the stuffiness and most of any conversation that goes on is interspersed with the sexy drawl of the sax. Excellent live jazz bands play nightly from 9pm onwards. It's mainly jazz standards, which varies with each group’s interpretations. Green Tea who plays on Thursdays fuses in the funky beats of reggae, creating a concoction of individualistic sounds and tunes.
Keith is always on the lookout for new musical talent and wants to find locals who can bring something a little different to the table, injecting their own style to the jazz standards. Know anyone that who can blow out some sweet melodies with a sax?
